Chef ​Michael Castellano


​Michael Castellano has been in the restaurant business in one form or another for almost 25yrs. While most of his experience has been in the front of the house, he has enjoyed working in kitchens as well.
Michael had the privilege and honor of working and being raised in NYC restaurants. From the fast paced bistro to fine dining, he experienced the full gamut of cuisine and service. In 2004, he had the opportunity to open and work at 7-time Michelin-star award winning, small plates restaurant Casa Mono in NYCs esteemed Gramercy park neighborhood. Working alongside Mario Batali and James Beard winner (best chef) Andy Nusser, Michael enjoyed working with the world’s finest ingredients and restaurateurs.
In 2009, after opening a bistro in NY, Michael joined forces with his brother Joey and long-time best friend Tommy to open Blackfin Bistro in Key West. The experience has been the best so far and is a blessing every day. The bistro represents a conglomeration of menu items and ideas that the 3 partners have come to love over the years.
